This is my favorite recipe!
MEDITERRANEAN KALE SALAD
1 bunch kale, stems removed
¼ cup golden raisins, soaked 10 minutes
¼ cup pine nuts
¼ cup diced sun dried tomatoes
2 tbsp extra virgin olive oil
2 tbsp lemon juice
¼ tbsp curry powder
¼ tsp celtic sea salt
¼ tsp black pepper
splash of nama shoyu
1. Stack two kale leaves and roll tightly. Cut the kale crosswise into very thin strips.
Repeat with the remaining kale leaves.
2. Add ½ tsp of salt and massage kale well with your hands, in order to soften the kale.
3. Add lemon juice, olive oil, remaining ¼ tsp salt, black pepper, curry, and toss well
with your hands, working the dressing into the greens.
4. Gently toss in the pine nuts, sun dried tomatoes and raisins.
5. Add in the nama shoyu to taste.
